Vegan Caesar Salad With Crisp Chickpeas

I’ve tried vegan Caesar dressing a million different ways. The best by far is this version with raw cashews. The dressing is flavored with garlic, mustard, miso paste, caper brine and obviously nutritional yeast to mimic that salty, briny flavor of real Caesar dressing. That dressing is massaged into kale and then tossed with romaine for some crunch. It becomes a whole meal with these crispy roasted chickpeas, these big torn croutons. I’ve also recently discovered that if you put it in a wrap and toast it, it’s amazing.
