These cozy yet reviving rice bowls pair Thai red curry-stained rice with tender chicken and a citrusy slaw.

These red curry chicken and rice bowls are inspired by the experience of eating red curry with chicken, a bowl of rice and papaya salad all at once. Start by toasting rice with red curry paste, so that all of the flavorings and aromatics in that red curry paste kind of bloom. You add boneless, skinless chicken breast on top of that rice. As the rice is steaming, it’s really gently but effectively cooking the chicken, so that it’s tender and not dry and really juicy. Then all you do is plate the rice with the chicken and a big heap of that slaw in a bowl, and you have yourself a really colorful, really flavorful meal.
