Creamy Cottage Cheese Basil Pasta

This creamy cottage cheese basil pasta is like a cross between Alfredo and pesto. The cottage cheese is creamy like heavy cream but it’s much lighter, which means that the flavors of the basil and the parmesan can really come through. Toss the sauce with the pasta in the pot, off the heat so that the cheese doesn’t curdle and then you’ll just keep tossing and adding pasta water as needed until it’s silky and glossy and just looks so wonderful.
