Red red is a common dish served in homes across Ghana and also by roadside vendors and in chop bars. This popular dish is a cooked bean stew in a fragrant broth of red peppers, onions and chile. The stew is also enhanced with savory crayfish and floral red palm oil. Typically, it’s made with a black-eyed pea or Bambara beans, but any type of canned beans can be used. The beans are cooked until they collapse and give the sauce a lovely, saucy starchiness.
