Tomato and Orzo Soup With Marinated Feta

This is tomato and orzo soup with marinated feta. Begin by sautéing the onion, carrot and garlic. Add the tomato paste, some spices and cook until the paste is deeply red. Stir in the orzo, some seasoning and then pour in the chicken or veggie stock. While the soup is cooking, quickly combine the feta with blitzed parsley, chile flakes and olive oil. This adds a lovely creaminess and acidity to the dish. Spoon this all over the top and enjoy.
